Mix 275ml lukewarm water, brown sugar, and dry yeast in a bowl and let it sit for 5 min until bubbles appear.
In a separate bowl, mix flour, salt, and butter. Add the water from step 1 and use KitchenAid to mix for 10 min.
Rest the dough for 5 min. Roll it into a long cylinder and divide it into eight equal pieces. Form little bread balls and let it rest for 1 hour.
Now make the lye solution (300ml of water for 12g of lye) and dip each bun for 10-15 seconds. With a sharp knife, cut an X into the top.
Bake on a silicon baking sheet at 360F for about 13-15 minutes until golden brown. Turn around for 2 minutes to brown the bottom.
