Ingredients:

  • 4 pc -

    Egg

  • 1 p -

    Salt

  • 300 ml -

    Milk

  • 1 tsp -

    Vanilla Extract

  • 70 g -

    Brown Sugar

  • 30 g -

    Raisins

  • 40 g -

    Butter

  • 1 pgk -

    Powdered Sugar

  • 250 g -

    Fresh Berries

  • 300 g -

    All Purpose Flour

Steps:

  1. Combine the berries, 40g of sugar, and vanilla in a saucepan and gradually heat on low until the berries break apart and simmer. If the liquids get too low, you may need to add some water.

  2. Using an electric mixer, whisk the egg whites and pinch of salt until stiff, set aside.

  3. Beat together flour, sugar, salt, egg yolks, and milk until combined.

  4. Now, fold the egg whites in with the remaining batter.

  5. Heat a large cast iron pan on medium-low heat until hot. Add the butter until barely melted, then immediately add the batter and cook for about 1 minute.

  6. "Cut" into quarters with your spatula and carefully turn over the quarters.

  7. Using your spatula, start cutting into smaller, irregularly shaped pieces and cooking for 5 more minutes. Add raisins after 4 minutes. Serve on a plate with compote, applesauce, or plum butter and dust with powdered sugar.
